Apple Pie Filling


35 c. chunked or sliced apples

4 c. sugar

1 c. cornstarch

2 tsp. cinnamon

1/2 tsp nutmeg

1 tsp salt

3 Tbsp lemon juice

10 c. water

Yellow food coloring (optional)


Cook and stir until thick and bubbly. Add 3 Tbsp lemon juice and 3 drops of food coloring.

Fill jars with tart apples, peeled & chunked/ sliced. Leave 1″ head space. Pour hot filling over apples. Work out bubbles with knife. Process 25 mins for Qt and 15 mins for pints. Makes 7 quarts.
